happy birthday mom!

I grew up having colorful yummy deserts for every holiday. My wonderful mother (read on to see pictures of her) would make a cookie cake for each holiday, in a shape (heart for St. Valentine's Day, clover for St. Pattys, etc.).  I unfortunately cannot bake with her as she lives 6 hours away. So, I got creative and made my own St. Patricks day desert. It turned out very yummy!

Cookies
1 Box Chocolate Cake Mix (I used the one from Trader Joes)
1/2 Cup butter, softened to room temperature
2 Eggs
  • Preheat oven to 350 degrees.
  • Mix ingredients until combined.
  • Drop spoonfuls of cookie batter onto baking sheet about two inches apart.
  • Bake for 10-12 minutes.
  • Cool.
Cream Cheese Filling
1/2 Cup butter, softened to room temperature
1 8 oz. Package cream cheese, softened to room temperature
1 1lb. Box of confectioner’s sugar
1 tsp Vanilla
  • In a mixer, cream butter, cream cheese and vanilla.
  • Gradually add sugar and mix until smooth.
Makes about 24 cookies or 12 cookie sandwiches



I LOVE freebies!! I love Costco free samples, free Viagra pens (my grandmother was a receptionist at a clinic and would bring handfuls home...no pun intended) Oh, and don't get me started on buy one get one free!

Anyways, here is a free download I found. I love the colors, and the cheery Spring feeling! Print it off on a cardstock and give to a friend, coworker, lover, or stranger!




As I mentioned earlier, I have an amazing mother and today happens to be her birthday!  She is loud, boisterous, inviting, and the life of the party! I am so proud of her for her creativity and her dedication to the people she loves. Happy Birthday Mother!
